Red Velvet Cream Cheese Cake

Red Velvet Cake is traditionally made with a cream cheese or white frosting covered and in-between layers. But recently I’ve been asked for a recipe to make a red velvet cream cheese cake and searching many recipes and trying out different ones, I came across the one I prefer and will share. To actually make a red cream cheese cake didn’t seem too appealing; instead, by incorporating the velvety smooth cake along with the creamy to die for cream cheese portion, the end result is heaven. Red velvet cake was originally made with grated beets which gave it its colour. Nowadays it is made with red food colouring which is easier and readily available. It was the signature dessert at the luxurious Waldorf-Astoria Hotel in New York City in the 1920 and is now resurging as a must try everywhere. Hope this is what my long time friend is looking for, as it is velvety creamy goodness.

For the Cream Cheese

500g cream cheese
3 eggs
120g sugar
1 teaspoon vanilla extract

Beat the cream cheese with sugar, vanilla and eggs until creamy. Set aside.

For the Red Velvet Cake

165g sugar
140g flour
¼ teaspoon salt
60g unsalted butter
1 egg
125ml buttermilk
1 teaspoon baking soda
1 tablespoon cocoa
1 teaspoon white wine vinegar
1/8 teaspoon red food colouring
1 teaspoon vanilla extract

Beat Sugar with butter and egg until creamy and pale in colour. Add the vanilla extract vinegar and food colouring. In separate bowl mix all dry ingredients and add half into the wet mixture. Incorporate without beating too much. Add half the milk and then the rest of the dry, finishing with the milk.

Line a 20cm spring form cake pan with parchment paper. Pour the cake batter into the pan and spread evenly using an offset spatula. Pour the cream cheese batter on top of the cake mixture. Bake in preheated oven for 50-55 minutes at 180C.

Adicionar a baunilha, vinagre e corante vermelho.

500g bacalhau
500g batatas
3 Cebolas
2 Dentes de alho
2 Ovos cozidos
100ml azeite e um pouco mais para regar
500ml leite
Azeitonas pretas
Sal e pimenta

Demolhar o bacalhau e mudar a água várias vezes.

In Portugal salt cod is a staple of many households. And it is not because there are vast amounts of this fish in Portuguese waters, as cod is from colder waters in the Atlantic such as Norway. We Portuguese have adopted this fish as if it was the son of our own waters. The famous salt cod croquettes are know as a Portuguese appetizer as are many other recipes. There are hundreds of ways to cook cod, but for now I will share Bacalhau à Gomes de Sá which is easy and tasty. This recipe is for 4 persons, however, if you go for seconds, it may not be enough :)

For the Cod

500g salt cod
500g potatoes
3 onions
2 cloves garlic
100ml olive oil and more to drizzle
2 hard boiled eggs
500ml milk
Salt and pepper
Black olives

Soak the code overnight and change the water several times. In a large pot, boil the cod for 2 minutes, remove from the stove and let stand for 20 minutes covered in the hot water. Heat the milk until boiling. Shred the cod into large pieces and place in a large bowl and pour the hot milk over it. Cover and let stand for one hour. In a pot cook unpeeled potatoes, once cooked, peel them and cut into slices of ½ cm thickness.

Slice onions and chop garlic. Cook onion in oil until translucent and add the garlic, season with salt and pepper to taste. It is a good idea to taste the cod before adding any salt to the dish to prevent over salting the food.

In baking dish, place a layer of onions, a layer of potatoes and cod (discard the milk) on top and continue the layers until all ingredients are used up, ending the last layer with onion. Drizzle with olive oil and bake in pre-heated of at 160C for 30 minutes. Garnish with black olives, egg and parsley.

Pumpkin Pie - Tarte de Abóbora

Honey Glazed Ham, stuffed Turkey, sweet potatoes, a couple bottles of good wine to help it all down, families gather for Thanksgiving to enjoy this filling meal and count on leftovers for turkey sandwiches the next day. But no one can over eat to the point of not wanting to have dessert. Classic Thanksgiving dessert is pumpkin pie, with a hint of fragrant spices and a generous dollop of whipped cream along side it. This pie can be made with sweet potato puree as well and both versions are deliciously creamy and not only for the holiday. This is an any time dessert which can be enjoyed all year round.

For the Pate Brisee

Half the recipe of Pate Brisee (recipe can be found in the Apple Pie section)

For the Filling

250ml pumpkin pure
125ml cream
½ ml brown sugar
3 eggs
1 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp allspice

On a surface dusted with flour, using a rolling pin, roll out the dough until it is large enough to cover the 23 cm pie plate. Place over pie plate, trim the edges and refrigerate.

Beat eggs into pumpkin puree along with all other ingredients until it reaches a smooth creamy consistency. Pour mixture into the covered pie plate and smooth surface with an offset spatula. Bake for 50 minutes in a preheated oven at 190C. Serve with a generous dollop of whip cream flavoured with pure Maple syrup.

Colocar no frigorifico.

Summer time is gone and the fall has arrived. The long sunny days have departed until next year and the all day beach escapades are no longer, as the water feels too cold on the toes. The best thing about beach time in the Algarve is of course, the beach – toasted sand between the toes, the jumping into the waves as they are about to burst into the sand and foam up from the salt as the water recedes back into the ocean. The sun glitters on the water like millions of diamonds floating. The smell in the air is unique and the salt residue on the skin as it dries after a dip in the water sticks to you like it’s a second skin. Spending a few hours at the beach will open up your appetite for sure. My favourite is definitely bread with butter and grapes, it may sound like a weird combination but it tastes so good, especially at the beach. And of course going to a beach in the Algarve you need to take some pocket money for a cold beer at the local beach bar and so you can get a Berlin Ball (from German Berliner Ballen). Berlin Balls are simply round sugar and cinnamon dusted doughnuts. Vendors carry large baskets selling these delicious balls of fried dough calling out “Who wants a Berlin Ball?...Berlin Ball!” and who can resist! One is hungry from all the energy spent laying in the sun :) but then the smell of doughnuts floats right under the nostrils. As you bite into one, you feel like a kid, with sugar all around your mouth and face, you lick each grain of sugar off your lips as every ones else around you does the same. Bolas at the beach are usually plain but you can get them filled with pastry cream at any pastry shop around town, for which you need an extra serving of napkins to go along with it. They are as easy to make as they are to eat. You can make them smaller so you get more and share. After all, you don’t have to feel guilty for enjoying them yourself.

For the Dough

275g flour
100g water, 45C
75g butter, unsalted at room temperature
40g sugar
2 eggs, lightly beaten
5g yeast, instant
½ tsp salt
Canola oil for frying

Mix all dry ingredients and make a well in the centre. Add the eggs, water and butter to the well and start mixing in the flour until it is all incorporated. Knead the dough until well developed, about 8 minutes. Dust with flour, cover with plastic wrap and let it rise until doubled in volume. Deflate dough and roll it out using a rolling pin to just over 1cm thickness. Using a round cookie cutter cut rounds of dough and proof about 20 minutes. In large pot or deep fryer, heat oil to 180C and fry Berlin ball until golden on both sides. Dust with a mixture of sugar and cinnamon. Make about 9 large or 18 small.

Apple picking season is here! Golden Delicious or Royal Gala are my favourite. When combined with granny smith, it adds a tart twist to delicious pie. Whether you use Apples to bake alongside a mouth watering pork loin or make apple sauce with a dash of cinnamon apples are a great fruit to eat fresh from the tree, cooked or pureed. One medium size apple only packs in 75 calories and while eating it as a snack, it helps control your blood sugar, so you don’t feel the 3 o’clock tiredness coming around. This dough can be used with any fruit pie – but nothing beat the fresh smell of an apple pie fresh out of the oven….Yummy.

For the "Pate Brisee"

450 g flour
1 tsp salt
250 g butter
75 ml cold water

Cut the butter into very small cubes and keep cold until ready for use. Mix the flour and salt with your fingers rub the butter in with the flour until it resembles breadcrumbs. Add the water gradually until the dough forms into a ball. Divide the dough into two and then wrap it plastic wrap and let stand in the fridge for at least an hour.

For The Apple Filling

1.5 kg Apples peeled and sliced in ½ inch thickness
½ lemon, juiced
1 tsp Cinnamon
¼ tsp of nutmeg
1 tbsp corn starch
75 g brown sugar
30 g butter, cut into cubes
1 egg yolk
1 teaspoon milk
1 tablespoon sugar

On a surface dusted with flour, using a rolling pin, roll out the bottom half of the dough until it is large enough to cover the 23 cm pie plate and an extra 2-3cm overhang. Sprinkle the apples with cornstarch and add the remaining ingredients and mix well with your hands so that the apple slices do not break. Place the apple mixture in the covered pie plate and dot with the cubes of butter. Roll out the top part of the dough until it is large enough to cover the apples and leave 2-3cm overhand. Using your fingers, pinch the dough all around so the top and bottom are sealed. Slightly beat the egg yolk with milk and brush the dough with. With the tip of a sharp knife, cut a small hole in the centre of the pie so steam can escape as it bakes and sprinkle with sugar.

Bake in preheated oven to 175C for 40 to 50 minutes
